Lamb chops with squashed lemon butter beans
A zesty new way to serve up lamb - mop up the lamb juices with the mash, yum

- Mix the lemon zest and juice with 4 tbsp olive oil and the garlic. Drizzle the chops with some of the lemon mix. Grill for 3-4 minutes either side. Meanwhile, tip the beans into a pan with 2 tbsp water. Season and simmer for 3-4 minutes. Remove from the heat and roughly mash, then stir through the rest of the lemon mix and the parsley. Serve with the chops.
