Vietnamese grilled chicken in lettuce parcels

These meatballs can be made the night before, making them a great prepare-ahead party nibble

Method

  1. Mix the chicken, shallots, garlic, lemon grass, cornflour, coriander and fish sauce in a bowl with some black pepper.
  2. Heat the oven to 200C/fan 180C/gas 6. With lightly oiled hands, shape the mixture into 4cm meatballs. Roll each meatball in sugar and put on a baking tray lined with foil. Bake for 15 minutes, shaking the pan a couple of times to evenly coat with the sugary caramel.
  3. To serve, put a meatball on a lettuce leaf and sprinkle with cucumber, coriander and chilli. Serve with a bowl of sweet chilli dipping sauce.

Lemon grass

Use the bottom 1/3 of the lemon grass. Smash with the side of a knife then peel off outer layers and chop what's left.

    I'm saving these babies to serve for my parents' wedding anniversary, along with several other finger food recipes on the site. I'm not patient enough to mince chicken, and chicken mince seems hard to obtain, but I've found that Halal butchers tend to do it.

    I made these with turkey mince as well, and they were a bit wet so I cooked them for a bit longer than it said and they came out just lovely. The other reason I think they took longer to cook was perhaps because they were larger than they should have been - think there's a mistake in the recipe as 4cm meatballs are quite large, and the mixture definitely doesn't make 30 of them at that size. Other than that, just gorgeous, guests loved them and I will definitely make again

    I thought this was a great recipe - it was easy to make and looked just like the picture - but served it to guests on two separate occasions and it wasn't popular either time. The first time one person liked it, the second time none did.

    I made these wonderful chicken meatballs as part of a family BBQ yesterday. They were definitely the star of the whole meal. As suggested, I made the mixture up the day before and left overnight in the fridge. I hadn't got enough lemon grass so added a good squeeze of lemon grass, ginger and coconut paste...yummy!

  • 500g skinless chicken thighs fillets, pulsed to mince in a food processor or use chicken mince
  • 3 shallots , finely chopped
