Halloumi skewers with parsley & lemon salsa

Method

  1. Put all the salsa ingredients into a small bowl, season and mix well.
  2. Cut each block of halloumi into 8 equal slices. Cut each slice in half so you end up with 32 pieces.
  3. Heat 1 tbsp of the oil in a large frying pan. Brown the halloumi on both sides, drain on paper towel then push in a skewer so it looks like a lollipop. You will need to do these in batches, adding a bit more oil as you go.
  4. Serve warm or at room temperature with the salsa.

Preserved lemons have a concentrated lemon taste without the sharpness of fresh ones.

The salsa can be made in the morning. The cheese can be fried up to 4 hours before and then reheated in a 180C/fan 160C/gas 4 oven for 5 minutes.

    I made this on Boxing Day as a starter before the sit down meal, for 16 guests along with some other tasty tapas recipes. They went down a treat and everyone commented on how tasty the salsa was....it made lots too. Definitely do this again!

    Probably the best salsa ever! Great with halloumi or a fish dish, even friends who don't like capers, love this recipe. This is a firm favourite

    I made this last night as a starter for 4 people. I halved all the ingredients, very finely diced the onion, capers, olives and preserved lemon rinds, sliced 1 block of halloumi into 8 slices, fried them and served them on some lettuce with the salsa sprinkled over the top.
