Baked eggs with ham & tomato

An simple dish that always delights, make it in one big dish to share or in individual dishes for dinner parties

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Heat a little oil in a pan, sizzle the garlic for a few seconds then add the tomatoes and simmer for 10 minutes until thickened.
  2. Stir in the basil. Divide the sauce and ham between 2 individual baking dishes. Crack an egg on top and season.
  3. Bake for 12-14 minutes until just set. Serve with crusty bread.

    i have substituted fried bacon bits instead of the torn ham, but it adds to the preparation time. Also, if basil isn't available a small bunch of roughly chopped parsley does just as well. I think i have this recipe at least twice a month on saturday mornings. it's great.

    Much yummy eggy goodness - watch out if you're using a fan oven though or the eggs can go hard! Add some mixed herbs to the tom's instead of basil - yum! dxx

    really tasty. i added some chopped onions, mushrooms and courgette which gave it a nice flavour and meant you could have it for dinner rather than brunch.

    Delicious. I made this for breakfast yesterday. It came out really nice, although I made some changes. I used fresh tomatoes instead of tinned ones. I didn't use basil, as it wasn't available at that moment. And some extra little spices (dried chili powder, pepper, salt) for the sauce; as we are prefer spicy food. So, the dish came out really tasty. Yummy!

    It was easy to make and I quite enjoyed it but it was too tomatoey for the children and they wouldn't eat it
