Grilled sausages with tomato & sage

Method

  1. Heat the grill. Put the sausages in a shallow, ovenproof dish with the onion and grill for 10 minutes, turning the sausages occasionally.
  2. Add the tomatoes and sage. Season and stir well. Grill again for 10 minutes or until the tomatoes start to brown around the edges.
  3. Meanwhile, boil the sweet potato until just tender, about 7-8 minutes, then roughly crush with a little olive oil and seasoning. Serve with the sausages.

    Quick and simple meal. Great for a weeknight dinner and it's nice to do something different with sausages rather than having gravy all the time. I added some chopped red onions to the pan to give it some extra flavour and texture.

    Wow - made this with 22 sausages tonight and it was just as easy ! lovely fresh tasty food - have already passed the recipe onto a friend who dropped in and smelt it cooking - even impressed the MIL !!! Will definitely be doing this one again !

    A very easy fail safe, but simply yummy week night dinner. The sweet potato is a great choice of side for this alternative bangers and mash! Will be making again very very soon.

    I have made this a few times now and we love it. I put it in the oven rather than the grill, takes a bit longer but the sausages stay so tender. Love it with baked sweet potato and sour cream too.

    Brilliant recipie and really easy to make. I added some crushed garlic to the tomatoes and used two tins in the recipie but other than that no changes. Love sweet potato mash anyway and normally just have it with sausages and onion gravy so this made a nice change.

    This was so much nicer than i thought it would be! I added a bit of red wine and balsamic with the tomatoes and cooked it down for ages to make the sauce sticky and thick.

    I loved this recipe. I needed a quick alternative to cook sausages and this was delicious. It made such a nice change from cooking gravy and I am surprised by how simple it was. If your on the go and need a good filling meal, i would recommend this. Yummy!

    This made a nice change to the usual bangers and mash. I threw in a cubed courgette aswell to bluk out the sauce. Its so versatile you can you can throw anything in. HIT!
