Cranberry granita

A quick dessert idea great for winter dinner parties, using the Christmas berry, the cranberry

Method

  1. Bring the sugar and port to a boil with 250ml water. Add the cranberries and simmer for a few minutes.
  2. Whizz in a food processor then strain through a fine sieve and cool.
  3. Pour into a wide shallow container and freeze. Break up the surface every 20 minutes with a fork until completely frozen.
  4. Serve in shot glasses with a little mint on top.

    this was very nice taste but i think it would be better to follow the freezing instructions!!! i didn't stir it often enough and it sort of ended up a frozen lumpy mass!!! not flaky like granita should be....
