Bacon, mozzarella & pine nut salad

Pine nuts add a satisfying bite to this simple salad, a winning combination of flavours

Method

  1. Toss together the salad leaves with the mozzarella, pine nuts and dressing. Divide between 2 plates and scatter the bacon over.

  • 1 ball mozzarella , torn into pieces
  • 2 tbsp pine nuts , toasted
  • 1 tbsp red wine vinegar , 2 tbsp olive oil, seasoned and whisked together to make a dressing
  • 8 rashers thin streaky bacon , grilled until crisp, broken into pieces
