Glazed cranberry tartlets
A super cute way to make the most of cranberries at Christmas

Cook 30 mins
Ready in 30 mins- Mix the flour mixture into the egg mix. Bring the milk, double cream, vanilla and orange zest to the boil then whisk into the egg mix.
- Bring to the boil again in a clean pan, stirring and beating to get it smooth. Cool.
- Spread a layer of the pastry cream into the tarts.
- Neatly cover the surface with fresh cranberries and brush with apricot jam.
Origins of cranberries
Cranberries grow wild in Northern America and Europe. Cultivated ones come from the US and Canada.

- 2 tbsp flour , mixed with 2 tsp custard powder
- 200ml milk
- 250g cranberries , fresh or frozen and defrosted
- 50ml double cream
- 1 vanilla pod , split
- 1 orange , zested
- 6 sweet tartlet cases , Marks & Spencer does good ones
- 4 tbsp apricot jam , heated with 2tbsp water then sieved
