Method

  1. Heat the oven to 180C/fan 160C/gas 4. Put the dates and tea in a saucepan and bring to the boil. Cook for 3-4 minutes to soften the dates. Stir in the bicarbonate of soda.
  2. Beat the butter and caster sugar together with electric beaters until pale and creamy, then beat in the egg, flour and mixed spice. Fold in the date mixture and pour into a buttered ovenproof dish or brownie tin. Bake for 30-35 minutes or until the top is just firm to touch.
  3. Meanwhile, make the sauce by putting the sugar, butter and cream in a pan over a low heat and simmer until the sugar has dissolved. Cook until the sauce is a lovely toffee colour. Cut the pudding into squares and serve with the warm sauce and a scoop of vanilla ice cream.

    I've made this twice now, amazing! It had all my flatmates wanting to marry me! I like it with some vanilla ice cream. It did take quite a bit longer than it says to cook, although it might be bacause I made it in a loaf tin. I'm making it again tomorrow as a birthday cake for a friend, YUM!

    This is a fabulous recipe, everyone LOVES it! I made mine with green tea as I didn't have black, and with vanilla extract as I didn't have allspice. I also spread some sauce over the cake when it was fresh out of the oven and that makes it glossy and sticky. It has a wonderful light texture, reheats very well from frozen in the microwave, and I too keep the sauce in a jar in the fridge.It is the best sticky toffee pudding I've eaten, and I have tried a few!

    Made this today & went down very well. Maybe the sauce was a bit too sweet for me though although no one lese complained as their mouths were too full. Otherwise was fabulous. Made double the toffee sauce & poured some over as others suggested. yummy!

    Made this pudding tonight for my family, my father in law who doesnt really like sweet puddings ate 2 servings, and my mother in law was more than happy to take some home :D Easy to make, really great consistency, very spongy and soft, excellent pudding, will definalty be making it again for my side of the family!

    I made this the other day for a dinner party. OMG it was wonderful. I made it the day before and then warmed it up in the microwave with the toffee sauce poured over the top, it was delicious, so light, heaven on a plate! This pudding and toffee sauce also freezes very well too.

    Oh my word.... stonkingly, gobsmackingly gorgeous. Made the "serves 8" version (but with twice the sauce) and I am devastated to tell you that my horde of 5 have eaten the lot. I am never going to be taken out for dinner again if I keep producing stuff like this at home!

  • 200g dried dates , stoned and chopped. Buy Medjool if you can
  • 250ml black tea (not too strong)
  • ½ tsp bicarbonate of soda
  • 85g unsalted butter , softened
  • 175g self-raising flour
  • 1 tsp mixed spice
  • 175g golden caster sugar
  • 2 eggs , beaten

FOR THE TOFFEE SAUCE

  • 100g light muscovado sugar
  • 100g unsalted butter
  • 142ml carton double cream
