Tomato, mascarpone & mozzarella lasagne

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry the onion and garlic in 4 tbsp olive oil until softened but not coloured. Stir in the tomatoes, season and bubble for about 15-20 minutes or until the sauce is thickened and glossy. Remove from the heat and stir in the basil.
  2. Pour a layer of the tomato sauce into a large rectangular baking dish and cover with a layer of lasagne sheets. Arrange one-third of the mascarpone and mozzarella over the lasagne and spoon over another layer of sauce. Cover with lasagne sheets. Repeat the layers. Finally, add a last layer of lasagne, spoon over the remaining tomato sauce and dot the last third of the mascarpone and mozzarella evenly across the top. Add a grinding of black pepper and bake for about 40 minutes or until the lasagne layers are soft when tested with the point of a knife, and the cheese is golden and bubbling.

Using dried lasagne

If you are using dried lasagne, even the no-cook kind, cook it for about 10 minutes first in boiling water, or it will soak up too much of the sauce and you'll end up with a dry lasagne.

    Really, really good. Had a great flavour and was eay to make. Hardest bit was finding the tinned cherry tomatoes (Tesco's finest). Worth it though!

    I added a sprinkling of fried bacon pieces inbetween the layers to add some more flavour, the kids loved it. Would definitely make again.

    Following 'Kirsty's' comment I used 4 tins of toms. As also added a few mock bacon rashers chopped up (I'm veggie). It was yummy.

    A great variation for lasagne... currently doing a food project on lasagne and this was perfect :) got me full marks... and tasted fantastic! will definately be doing it again!

    Nice lasagne - normal tins of tomatoes worked well, as did substituting some of the mozzarrella for mild cheddar.

    I have just made this to use up an extra pack of mozzarella and half a tub of riccotta (instead of marscapone). Very easy and delicious. All you have to do is make the tomato sauce (I used the cheap kind of tomatoes-still very good). I used dried lasagne and added extra vegetable stock, checking that the lasagne stayed covered and that all the extra liquid was either absorbed or evaporated. You can avoid any suggestion of blandness (if that's a concern) by making sure the tomato sauce is really tasty.
