Chicken cacciatore

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry the onion and garlic in 3 tbsp oil until softened but not coloured. Add the tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in the mascarpone and half the basil, roughly torn.
  2. Heat a little oil in a pan and fry the chicken on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the rest of the basil.

    I couldn't get any mascarpone so substitued fromage frais. The sauce wasn't as thick and creamy as it would be with the mascarpone but was still deliciously tasty and was all eaten up by my family.

    Fancied making this meal but did't have all the ingredients, only had 6 cherry toms so added a can of chopped tomatoes, only had 2 chicken breasts but cooking for 4 so cut the chicken into strips plus I had some streaky bacon that needed to be used so chopped and added that. Didn't have any mascarpone so put some sliced mozerella on top of the dish before putting in the oven. I left the dish in the oven for as long as it took me to cook some pasta which I then stirred into the dish with some extra chopped basil. Don't know if the meal we had could be called chicken cacciatore but it was delicious. Even the kids enjoyed it. Will cook the meal as it should be next shopping day though. Promise

    I made this with half tinned and half fresh cherry tomatoes, the kids moaned as wanted pizza but loved it and all clean plates. I served it with tagiatelle and broccoli. Will definitely cook this again.

    A lovely recipe. I used a punnet of fresh plum tomatoes and a tin of plum tomatoes instead of tinned cherry tomatoes. I also added some hot paprika. My partner liked it so much he informed me we're not to eat anymore so we have some left to take to lunch tomorrow!

    So simple to make but really lovely!! I made it with chicken thighs instead of chicken breast, Everyone really enjoyed it, this is one that I would recommend to everyone and one that will become a firm favourite

    Love this recipe I have made it lots of times, but this summer I have been using my own grown cherry tomatoes and using the recipe for Roasted Tomatoes & Red Onions, found on here, it gives an interesting twist to the flavour. As Chicken is expensive here in France I have also cooked it with Pork and even tried it with Duck Breasts.

    This was so good. Didn't have the cheese and used normal tomatoes but very tasty anyway. Accompanied by the recommended potatoes it was superb.

    I made this for friends last night and we all loved it. My son picked out the tomatoes but I will make this again. I also did the olive oil potatoes. A very stress free supper to make a little in advance. It will become a firm favorite.

    I made this for the family, it went down a treat, beautiful flavours, My husband is a dab hand in the kitchen himself, and even he was impressed, and loved it. He asked me what was in it and i said i,m not telling him as its my recipe now.Will definatly make this again many times.
