Chicken cacciatore

A tasty tomato and chicken dish to feed the family - serve with short pasta or a big bowl of roast potatoes

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry the onion and garlic in 3 tbsp oil until softened but not coloured. Add the tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in the mascarpone and half the basil, roughly torn.
  2. Heat a little oil in a pan and fry the chicken on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the rest of the basil.

    I love anything with tomatoes hubby not too keen but I got him to try this dish 3 weeks ago and he enjoyed it some much i have had to cook it again for him this week Also passed the recipe on to my neighbour and my daughter and both give it full marks. And the bonus is it is so easy

    Simple and very tasty. I usually do this with boiled new potatoes and green beans but will try it with rice next time. If you are having trouble finding tins of cherry tomatoes try Sainsburys, that's where I get mine from.

    This was really easy and really tasty. Did most of it in one pan too so saved on washing up. Try this you'll love it, my 6 year old liked it apart from the sauce, he just wiped it off!

    Not bad, I quite liked it, fella didnt! I had some left over so the next day I mixed it with pasta, had one mouthfull which was yummy and dropped it all over the floor, then the dog ate it! and he reeaaallly liked it!

    Good, quick and easy. I added a pinch of chilli to the tomatoe mixture and used ordinary tinned chopped tomatoes as they were less expensive than the tinned cherry tomatoes. Will be one of my week night suppers on a regular basis.

    This was fantastic & really quick & simple to make. Instead of mascarpone cheese, (My children aren't keen on creamy sauces!) I put a slice of mozzarella on each chicken piece, just before it went in the oven. I've made it a few times now, with various types of pasta, & everyone has loved it!

    I'm going to cook this with the crushed olive oil potatoes (roated slightly in the oven as per suggestions) for my Mum & Step Dad this weekend - maybe add some sliced pitted black olives to the sauce. Can't wait!

    Absolutely gorgeous! I'm on a diet so we had it with boiled potatoes, but I would recommend garlic roasties with this dish to give it a bit of crunch! Fantastic though, we added an extra clove of garlic and used dried basil but it was still fab! Would definately make again!

    Doubled up everything for the extended family. Added some wine, couldn't get tinned cherry toms so used whole tinned toms and added fresh cherry toms towards the end. Family thought it was great. Will do again.
