Chicken cacciatore

A tasty tomato and chicken dish to feed the family - serve with short pasta or a big bowl of roast potatoes

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry 1 finely chopped onion and 2 crushed garlic cloves in 3 tbsp olive oil until softened but not coloured. Add 2 x 400g tins of cherry tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in 4 tbsp mascarpone and half a handful of basil, roughly torn.
  2. Heat a little olive oil in a pan and fry 6 chicken breasts on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the remaining half handful of basil.

    Once again i am cooking this 'chicken thingy' as my partner calls it! as it is amazing and easy to cook, wonderful mopped up with focciaca bread and a lovely chilled chianti - one of the best dishes yet

    Wow, made this tonight for the family dinner and everyone loved it. Didnt even know you could get cherry tomatoes in tins till I saw this recipe. Have never before used mascarpone cheese but this recipe will definately be on my families fave list. Had it with lots of roasted baby potatoes.

    I made this dish when i couldnt think of anything else, was so impressed, totally loved it. I added some black olives and 1 chilli. My husband was very impressed. I served it with garlic roast potatoes. I have the ladies coming at the weekend so it will be a perfect easy to make and tasty dish.

    Gorgeous , easy dinner....made a quorn version as well as chicken version. Added a large glass of red wine, extra red onion and a spoonful of sugar.....will be making this again and again

    Great sauce but I don't think it goes well with roast potatoes. At least not with my crunchy ones. Try gnocchi instead. Also, I think next time I will use one tin of cherry toms and one of chopped ones so there is more sauce and fewer bits.

    Lovely recipe. Super easy to make. I put a little chicken stock in the tomato sauce for extra flavour. I also used chicken thighs instead of breasts
