Chicken cacciatore

A tasty tomato and chicken dish to feed the family - serve with short pasta or a big bowl of roast potatoes

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry 1 finely chopped onion and 2 crushed garlic cloves in 3 tbsp olive oil until softened but not coloured. Add 2 x 400g tins of cherry tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in 4 tbsp mascarpone and half a handful of basil, roughly torn.
  2. Heat a little olive oil in a pan and fry 6 chicken breasts on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the remaining half handful of basil.

Serve with a short pasta, like fusilli, or a big bowl of potatoes roasted with olive oil and rosemary.

    Lovely dish. Made this for the four people in my family, so I only used 4 chicken breasts and everybody loved it. Served with a pot of roasted potatoes, string beans and Jamie Oliver's 'easy peas' from Jamie's dinners. Superb, thankyou.

    I couldn't find any mascarpone so used philadilphia instead and plum tomotoes instead of the cherry ones along with a squirt of tomato puree. I though it was lovely although I was expecting it to be bit more creamy and not just as tomatoey! Hubby and number 1 son didn't like it at all...but the dog apreciated theirs!! Other two kids wouldn't even try it. I would definately make it again for myself and try harder to get the correct ingrediants.

    Cooked this for a lunch for visiting family over a long weekend, so it needed to be something quick to make. It was, and it was fabulous ! I did it with crushed olive oil potatoes and the summer crunch salad. I think it would also be great with a handful of black pitted olives added.

    I made with skinless chicken. Was really horrible. Chicken was really tough and sauce bitter and over creamy. Perhaps I browned the chicken too long? Don't know but I must have done something wrong.

    This was delicious and went down a treat. I added more than 4 tablespoons of Mascarpone as I like creamy sauces. I also added a little sugar to take away the bitter taste of the Tomatoes. I served with creamy mash, baby corn and green beans.... will definitely be making this again!

    Superb recipe! Absolutely delicious! Chpped tomatoes work equally well with tinned cherry tomatoes which sometimes are difficult to find. Also works well without the basil. Firm family favourite, which I often use for entertaining.

    Had to try this recipe as it is the highest rated main course on this website. Think I went a bit overboard with the mascarpone cheese as the sauce was quite orange. But it was delicious and scored high with three members of the family (the other one thought it was 'alright'). Served with new potatoes baked in the oven with garlic and Rosemary and some greens. Will serve with pasta and salad next time

    Just made this and it was lovely, I heeded the advice of others and used less mascarpone. It was tasting a little tomato soup esq so I added a little white wine, chilli, harissa paste, fresh thyme and chopped black olives whilst making the sauce and it worked a treat!
