Chicken cacciatore

A tasty tomato and chicken dish to feed the family - serve with short pasta or a big bowl of roast potatoes

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry 1 finely chopped onion and 2 crushed garlic cloves in 3 tbsp olive oil until softened but not coloured. Add 2 x 400g tins of cherry tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in 4 tbsp mascarpone and half a handful of basil, roughly torn.
  2. Heat a little olive oil in a pan and fry 6 chicken breasts on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the remaining half handful of basil.

    excellent dish, made this for my fiance and his mate and we all loved it. i added a teaspoon of oregano and served this dish with baby potatoes baked in rosemarry butter :-)

    A very nice dish that is so simple to make. We tend to serve it with penne pasta on the side. Very nice with a bottle of wine too!

    I made this as an easy main course for a dinner party - after noticing some of the comments said it was a bit bland I added plenty of italian dried herbs, a splash of wine and just a little paprika and dried chillies to give it a kick - it was fabulous and everyone cleaned their plates! I also used skinless chicken breasts and they worked fine. Will definitely be doing this one again!

    What a fantastic recipe. OH loved it and considering he doesnt eat tomatoes it must have been good. I served it with crushed roasted new potatoes seasoned with rosemary and some simple greens (asparargue and mangetout). Even the fussy one in the house ate it and enjoyed it begrudgingly. By the way, i halved the recipe except for the garlic.

    I made this chicken dish tonite it was lovely! I only used 2 chicken breast with one tin of cherry toms, and the rest the same, but i butterflyed to speed up cookin time. I also filled the chicken with a little mozzarella and wrapped it in bacon, fresh tyme works well in it just before you put in oven, i opted out for the masacopne due to loving tomato based sauces anyway

    Divided the sauce in half and used one half for 3 chicken breasts for hubbie and the other half over an assortment of chunky veg (leeks, carrots, potatoes, sweet potatoes and mushrooms) for a vegetarian option. Hubbie loved his chicken one and I loved my veggie one. Will definitely make again, both ways.
