Chicken cacciatore

A tasty tomato and chicken dish to feed the family - serve with short pasta or a big bowl of roast potatoes

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry 1 finely chopped onion and 2 crushed garlic cloves in 3 tbsp olive oil until softened but not coloured. Add 2 x 400g tins of cherry tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in 4 tbsp mascarpone and half a handful of basil, roughly torn.
  2. Heat a little olive oil in a pan and fry 6 chicken breasts on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the remaining half handful of basil.

    sorry to disagree with everyone but i found this a little tasteless (and i even added some mixed herbs and lots of garlic which i love). i used tinned chopped tomatoes as I could not find tinned baby toms. maybe that made a difference? on the plus side, it was a lovely creamy texture. just lacking oompf for me.

    Really enjoyed this one, and have popped it into MacGourmet as one of our favourites :) The flavours, oh the flavours. I'm getting hungry again! We did use half a tub of Ricotta instead of the mascarpone. Made for a healthier recipe as well.

    Added extra garlic, lots of seasoning and more basil. Would be nice with different vegetables such as peppers, corgettes and mushrooms. Smelled and tasted delicious, served with tagliatelle and a garlic flatbread. Easy to make crowd pleaser.

    It was very easy to prepare and the results were delicious. I used chicken breasts without skin on to cut down the cals but it still tasted great. Highly recommended.

    Great dish, enjoyed by everyone! Found tinned cherry toms hard to find so for anyone with a similar problem, try buying some passata and fresh cherry toms, popping in a saucepan and cooking until soft! Delicious served with crushed new potatoes.
