Chicken cacciatore

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry the onion and garlic in 3 tbsp oil until softened but not coloured. Add the tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in the mascarpone and half the basil, roughly torn.
  2. Heat a little oil in a pan and fry the chicken on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the rest of the basil.

    I have made this twice now, very easy and very tasty. I omitted the garlic, hubby hates it so I would imagine I lost flavour but it was still excellent. Served with mini chunks of potato roasted with Rosemary and green beans.

    This was scrummy i made a slightly healthier version as i'm trying to lose a few pounds, I used skinless chicken breast and par cooked them on a griddle pan and used a low fat mozarella. The family wowed about it and they didn't realize they were eating my diet food !!!!

    Gorgeous!! My Mum made it when we spent the weekend with her recently, and served it with rice, which was delicious :0) Such a delicious, incredibly easy recipe - I'll certainly be making it in the next couple of weeks, and I have a toddler and a newborn (just to reinforce how easy it must be, lol!).

    I would love to try this recipe - it sounds great, but I am unable to get tins of Cherry tomatoes. Does anyone know who stocks them? Would chopped tomatoes be O.K?

    Pearls Grub - I think cherry toms are much tastier and more tomatoey in this recipe, I'm sure my Mum got hers from Waitrose. HTH.

    Made this this evening for the first time! It was fab, i'll be making this again. I also swapped a tin of cherry tom's for chopped for the kids and added some leek was VERY easy to make and VERY YUMMY. (For Pearls Grub- we got our tin's of cherry tom's at Sainsbury's, GOOD LUCK!)

    I struggled to find tinned cherry toms so used plum toms and added so extra chopped toms. It worked we'll both my husband and I really enjoyed it.
