Chicken cacciatore

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry the onion and garlic in 3 tbsp oil until softened but not coloured. Add the tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in the mascarpone and half the basil, roughly torn.
  2. Heat a little oil in a pan and fry the chicken on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the rest of the basil.

    High quality dinner in relatively quick time. Used 1 tin of normal chopped tomatoes plus a small bag of cherry tomatoes. Didn't have mascarpone so just sliced some mozarella on top before putting in oven. Whole family loved it, had with roasted diced potatoes (unpeeled) and green beans.

    Made exactly as in the recipe for a mid week family meal and served with pasta. It went down very well, even with the children. Wouldnt change anything (except the fat content!) and will make this regularly from now on.

    Absolutely loved this recipe. Easy to make, and the smells coming out of my kitchen were wonderful. Really lovely subtle basil taste. I used slightly less mascarpone, as it was just a touch too rich for me but love the creaminess of the sauce. I served it with stuffe tortellni and my whole family, husband and three boys, can be very fussy. They all wolfed it down! Will cook again, would make a lovely easy dinner paty dish. Would definitely reccommend!!

    10/10, this recipe is delicious, I am not usually a fan of tomatoey dishes but with the marscapone it toned down the tomato and made it nice and creamy - an instant hit. Quick to make and foolproof.

    Really nice dish and very easy to make. I used skinless chicken breasts which were lovely, kept very tender in the sauce. Like the idea of adding some chilli to give it a bit of kick which I'll try next time. Would definitely recommend.

    Really tasty. I used chicken thighs as I prefer them to breasts. I just used dried mixed herbs rather than basil leaves. Will def make again.

    Not as spectacular as star ratings led me to believe. Sauce was good and I added sliced olives and mushrooms to make it more interesting. But none of us liked the lump of chicken so I wonder whether chicken chopped into smaller pieces would work better? But probably won't try in any case. A recipe has only one chance in this house!
