Chicken cacciatore

A tasty tomato and chicken dish to feed the family - serve with short pasta or a big bowl of roast potatoes

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry 1 finely chopped onion and 2 crushed garlic cloves in 3 tbsp olive oil until softened but not coloured. Add 2 x 400g tins of cherry tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in 4 tbsp mascarpone and half a handful of basil, roughly torn.
  2. Heat a little olive oil in a pan and fry 6 chicken breasts on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the remaining half handful of basil.

    Very easy to make. I served mine with baby new potatoes and then roasted them in the oven. Also with veg. My friends loved this dish every plate was clean in the house!

    Easy to make. Tastes a wee bit like tomato soup though! Added some chilli's for a bit of a spicy kick. Sprinkled some parmesan over it as well.

    Served for friends and their children, went down a storm, even with the fussiest eater. Served with the crushed new potatoes (with bacon and mushrooms). A big hit!

    I wanted something full of flavour and simple as I had freinds to dinner at the weekend. This went down a storm - lots of compliments about how tasty it was. I added extra tomato puree as I could only get tinned plum tomatoes from my local shop. The fresh basil really added that home-made flavour to the dish. Scrummy!!!

    Made this for a dinner party and worked really well. Used mozzarella cheese instead of marscarpone, and added black pitted alives. Was delicious and even better the next day.

    This is a simple and delicious dish. Don't see the reason for browning the skin of the chicken breast since it is going to be covered by the sauce so colour is not necessary and we don't eat the skin anyway so crispyness not necessary. Next time I will just remove the skin and bake.
