Chicken cacciatore

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Fry the onion and garlic in 3 tbsp oil until softened but not coloured. Add the tomatoes, season, then simmer for 10-15 minutes or until thick and glossy. Take off the heat and stir in the mascarpone and half the basil, roughly torn.
  2. Heat a little oil in a pan and fry the chicken on both sides until golden. Transfer to a baking dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through. Scatter over the rest of the basil.

    Wow we really enjoyed this, I've never used cherry toms from a tin before, it was cracking with the crushed news with olive oil, this was proven when Imogen declared herself not hungrey, and went to do some homework, but in a short time she was back and sereving herself a portion, then asked if we could save the rest for her boyfriend, he promtly finished the lot, and that really is the proof of the pudding, try it its full and rich,great for this time of year.

    Had to use pork tenderloin, because my mom doesn't like chicken. It's a good recipe, but next time i'm going to marinate the pork, to make it a little tastier. Didn't have any mascarpone so i used cream cheese, and also added a dash of white wine. Of course, i'll try this with chicken. Thank you!
