Steamed toffee apple pudding

A syrupy apple dish to round off an autumnal meal in sticky style

Method

  1. Butter and lightly flour a 1.2-litre pudding basin.
  2. Melt 4 tbsp of the golden syrup with 25g of the butter in a frying pan. Let everything bubble together for a couple of minutes then add the apple and cook for a further 5 minutes.
  3. Beat together the rest of the butter, the sugar and lemon zest in a large bowl with an electric whisk until pale and fluffy. Beat in the eggs, self-raising flour and milk, then stir in the rest of the golden syrup.
  4. Put the toffee apple mixture into the pudding basin and spoon the flour mixture over. Cover with a double piece of foil or greaseproof paper, with a pleat across the centre.
  5. Tie on firmly with a piece of string. Cook in a steamer over simmering water for 11/2-2 hours (if you don't have a steamer, put an upturned plate into a deep saucepan with a tight-fitting lid, half-fill with water and add the pudding basin). Top up the water if you need to. The pudding is cooked when a skewer inserted into the middle comes out clean. Turn out onto a plate, scooping up any apple that gets left behind in the basin. Serve with custard.

    First time I tried shortening the cooking time by cooking 20mins in microwave-result stodgy pudding. Next time I did the proper steaming - result light, sweet and delicious.

    Really easy to make, and the ingredients are mostly storecupboard. Cooked for 1 and 3/4 hours, it probably could have done with about 15 mins left as it was slightly dry. Nice, but not as good as the other apple pudding with sticky toffee sauce that's on this site - I think I prefer to have a sauce on top of the pudding rather than just the fruit.

    My 12 year old found and made this recipe, with a little help from me. It tasted very nice, but didn't have much of a toffee flavour and certainly not the gooey sauce around the apples that I was hoping for. I'm going to try the other recipe on this site next time

    Very very tasty and lovely and moist...but not quite as dark and sticky and 'toffee-ish' as I was hoping for. Nevertheless it went down a storm with my husband and two small children. The lemon zest gave it a lovely fresh zing which offset the sticky syrup really well. Served it with lashings of homemade custard.
