Thai pork with pickled carrots

Lightly pickling carrots in a spicy marinade makes a garnish with a bit of a kick

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Mix the vinegar, 2 tbsp of the honey, half the chilli, half the garlic, a pinch of salt and the carrot together and leave to marinate. Rub the pork with 1 tsp oil. In a hot, non-stick pan, sear the pork on all sides.
  2. Mix the remaining chilli, garlic and honey together with the fish sauce and lemon grass. Rub all over the meat, transfer to the oven and cook for 15 minutes. Rest for 5 minutes then slice into thick pieces and serve with the pickled carrots and some steamed rice.

    This dish is absolutely delicious, light and tasty. We had it with brown rice. It tastes so good you would never believe how few calories are in it! I most certainly recommend it to anyone. We didn't use olive oil though as it is far more of a Mediterannean ingredient than a Thai one.

    Absolutely fabulous! I would make double the quantity of the meat marinade though...to trickle over the meat when you serve it. Spot on!

    Really really yummy! Had to double up on the meat though think we'd have been too hungry with the portion suggested! We added rice with ours and would defiantly have this dish again.
