Pork chops with apple mash

Just two of you at home but fancy a proper Sunday dinner? These chops with gravy and mash make a comforting meal

Method

  1. Simmer the potatoes in boiling water until tender, drain. Cook the apple pieces in a little butter and a splash of water until tender. Mash the apples and potato together and season.
  2. Heat a non-stick frying pan until very hot. Rub over oil and season the pork chops. Sear the chops for 3-4 minutes on each side until browned and cooked through. Remove from the pan to rest under foil, then tip in the wine and boil hard for a few minutes until reduced by 1/2. Whisk in a knob of butter and season. Serve the chops with the mash, beans and pan juices.

    I didn't bother faffing about removing the pork and what have you. Just fried the steak in red wine and mixed herbs, was gorgeous. The apple mash is inspired! Would never have it any other way!

    Gorgeous, and the apple mash goes really well with it. Would cook the apples a bit longer next time though as they were a little lumpy in the mash.

    Just made this using pear cider instead of wine as its what i had on hand - it was lovely! sprinkled a bit of rosemary on the chops and added onion to fry as well, definately making this again.

    Nice, but I found the gravy a bit too acidic, which masked the flavour of the lovely apple mash. I would definitely make the mash again though lovely
