Prawn massaman curry

If you're a fan of Thai green curry, try a massaman for a change - the potatoes soak up loads of flavour

Method

  1. Cook the massaman paste in the thick bit of the coconut milk for a few minutes until it becomes fragrant. Add the rest of the coconut milk and simmer for a minute. Add the potatoes, cinnamon, cardamom and simmer for 15-20 minutes until the potatoes are tender. Add the prawns, sugar, lime and fish sauce, and cook for 3-4 minutes until the prawns are just cooked and pink.
  2. Serve the curry sprinkled with peanuts (if using), chilli and basil.

    I really want to make this , but can't find Massaman paste anywhere- Tesco, Sainsburys and Somerfield/Co-op no joy. I live in North Wales :(

    This was very quick to make and tasted gorgeous. Also looked fab. Tennisrennie - ordinary Thai curry paste would work just as well in my opinion.

    Amazing! loved it! fantastic just served with naan bread to mop up all the sauce. Has so much flavour to it will definitely be making again and again - luckily Sainsburys has just started selling Massaman curry paste.

    Yummy. Really fresh tasting. Agree with previous comment, very runny, may depend on brand of coconut milk. I would also use more potatoes next time. Served with basmati rice.

    Message for Tennisrennie.We live in Spain and there is a branch of Iceland which stock the Barts massaman curry paste, so I guess you can get it at a British branch.

    Very disapointed with this recipe! I cut the new potatoes up as small as large marbles but they took so long to cook that the sauce split. The sauce tasted good so I shall try again using part-cooked spuds. If at first you don't suceed .................

    Bought a Sainsbury's Taste the Difference Massaman curry paste. Used 1/2 a jar, which I guess was about 3 good tablespoons. Glad I did or it would have been too mild. I fried a finely sliced onion first before adding in the paste and put a chopped pepper in after the potatoes had been in about 10 mins. I par-boiled the potatoes before adding them to the sauce. We enjoyed it and will use the other 1/2 jar to make it again but didn't think it was anything special.

    Massaman curries are always so delicious, and this one is no exception - the sauce is amazing! My only critcisims would be that the potatoes took too long to cook, and there appeared to be too much sauce compared to solid ingredients. Would cut the potatoes smaller next time, in fact omit the potatoes and serve it with rice to soak up the sauce!

Ingredients

  • 1-2 tbsp massaman curry paste (look for Bart or Blue Elephant in the spice aisle)
  • 1 x 400g tin coconut milk
  • 150g small new potatoes , halved or quartered if large
  • 1 cinnamon stick
  • 2 cardamom pods , squashed
  • 200g raw king prawns (frozen are fine)
  • 1 tsp brown sugar
  • 2 limes , 1 juiced, 1 quartered, to serve
  • 1 tbsp fish sauce
  • 1 tbsp peanuts , toasted and chopped (optional)
  • sliced red chilli , to serve
  • shredded basil , to serve
