Penne with tomato, cream & basil

Method

  1. Cook the onion in 2 tbsp olive oil until soft. Add the garlic and cook for a couple more minutes. Tip in the tomatoes, then simmer for 20 minutes until reduced and thickened. Stir in the cream and simmer for a couple of minutes, then stir in the basil.
  2. Cook the pasta following packet instructions, drain and toss with the sauce.

    Can I make this recipe with low fat fromage frais or creme freche. I am on a low fat diet and find this to rich for me.

    I'm going to give it a try but will pop in some chopped sun dried toms to boost the sauce. If feeling non-veggie maybe some lardons too.

    i though this was really easy, and very tasty, i made the pasta fro lunch for 2 hungry children (reduced the amount of pata) and used the leftover sauce as pizza base for 2 large pizzas (thats the kids made themselves) tasted great, i added a tsp of sugar to the tomatoe's as they were simmering (to take away the bitterness)

    I thought this was a lovely, simple and tasty dish to do - perfect for a weekday night. I added a little ham as I had some left over and topped with a little parmesan (I also added a pinch of sugar). I think there is so much you could add, different vegetables or ham/bacon or chicken to this recipe and it would still work. And yes I think you could swap the cream for creme fraiche to make it healthier.

    I got half way through cooking this before remembering that I'd tried it before and not liked it! D'oh! Having said that I decided to do half the amount of chopped toms and added some sundried tomatoes. This time I loved it! Weird. Just got to leave it to cool and not eat it all as it's meant to be for my lunch tomorrow!

    I wasn't that impressed with this recipe but think maybe with a few tweaks or added ingredients it might be ok. As it stands I found it quite bland and too rich - after all it is basically just a tin of tomatoes mixed with cream!!

    Great basic reminder of what can be done with store cupboard ingredients. I added a tin of chick pea's, some left over spinach I had in the fridge, a teaspoon of sugar, and low fat creme fraiche instead of cream. Used rigatoni pasta. Topped it all of with some grated gruyere cheese and stuck it under the grill. Really delicious, and my 18 month old thought so too, which is always a bonus.

    It needs a lot less cream, half the tomatoes, and some additions (like veggies and spices). Otherwise as another poster said it's just pasta, cream and tinned tomatoes.
