Apple & cinnamon hot cakes

An apple treat that will satisfy the most ardent sweet tooth without being packed with sugar

Method

  1. Mix the flour, baking powder and caster sugar then add the egg and milk until you have a thick batter.
  2. Meanwhile, cook the apple with the butter, sugar and cinnamon until soft, keep warm. Melt some butter in a non-stick pan, then drop in spoonfuls of the batter. When little holes appear in the surface, turn over and cook until golden on each side. Serve with apple, a scoop of vanilla ice cream and a drizzle of maple syrup.

Good at any time of day. Get the kids to mix up the batter (you can always give it a blast with an electric whisk afterwards to get rid of any lumps).

    really quick to make and delicious too! We put chopped banana and strawberries in ours and topped with pureed apple (made in freezer for baby) and we all enjoyed them, bubba included - a treat for weekend breakfast minus the ice cream though.

    Is it supposed to be 1 teaspoon of baking powder? Mine taste really strongly of baking powder, so much so I've binned them. Maybe it's an obvious mistake, but I really can't cook so try to follow recipes to the letter. So disappointed as I really fancied these!

    I found these a little stodgy. I like my pancakes light and fluffy, and these ended up being quite dense. I added some applesauce to the batter, so I'm wondering if this effected it. The flavour, however, turned out quite nice.

    This was a real treat. I particularly loved the combination of apple and cinnamon with the pan cake. Served this for breakfast, but without the ice cream. I will definitely make this again.
