Stir-fried water spinach
Regular spinach will do equally well for this Asian side dish

Vegetarian
- If using water spinach, slice the bunch in half, separating the stalks from leaves.
- Heat 2 tbsp oil in a large pan or wok until hot, add the shallots and fry for 1 min then add garlic and fry for a further 30 seconds. Throw in the spinach and fry for 2-3 minutes until it starts to wilt. Add the rice wine, oyster sauce and a couple of grinds of black pepper, toss
Water spinach
Water spinach has arrow shaped leaves and hollow stems and is available from oriental shops where it is often labelled ong choi/y. Ordinary spinach will do just as well.

- 1 tbsp oyster sauce
