Water spinach

Water spinach has arrow shaped leaves and hollow stems and is available from oriental shops where it is often labelled ong choi/y. Ordinary spinach will do just as well.

Used ordinary spinach and added Sainsbury's hickory smoked almonds. Spinach when washed retained too much liquid. Should have used salad spinner to reduce this pre cooking.
