Haddock baked with tomato & olives

A relaxed one-pot supper to feed six. Serve with lots of crusty bread to mop up the sauce

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Cook the garlic in olive oil in a large roasting tin. Add chopped tomatoes, olives and capers. Simmer for 15 minutes. Sit the haddock fillets on top of the sauce, drizzle with oil and season.
  2. Transfer to the oven for 15 minutes. Scatter with torn basil to serve.

    Incredibly easy, and impressed the guests! I used undyed haddock which always tastes better, and tinned cherry tomatoes.

    Absolutely delicious! I was quite worried this would be a bit bland but it was so good. Very simple meal to do on a Friday night - will definitely be making again.

    Incredibly quick and easy ... and very tasty, too! Didn't have any capers, so made it without (and actually, I forgot to add the basil leaves as well!) but it still tasted lovely. Would definitely make again.

    Very quick and easy and healthy too! Delicious though quite strong flavours. I didn't have basil but it still worked without! Great served with steamed vegetables.

    Easy and tangy but perhaps a bit of a waste of haddock - pollack or even tofu would have tasted much the same after this treatment? Suspect it's a good recipe for people who don't actually like fish much

    I haven't got a heavy pot so cooked it on the hob, with just one large fillet ( cut into three pieces ) but minus the capers and basil, covered the pan and cooked on a low heat for ten mins. It came out fine, was very tasty and I ate it with crusty bread. Extremely filling and healthy.
