Crab & cheese toasts

- Toast the bread under the grill on both sides. Spread an even layer of brown crabmeat on top of each slice.
- Mix the white crabmeat with the chilli, coriander, crème fraîche, egg yolk and parmesan. Season with salt, pepper and lime juice.
- Generously top the toasts with the mixture and grill for a few minutes until golden and bubbling. Remove and decorate with the basil leaves.

- 1 cooked crab , white and brown meat separated (you can use a prepared, dressed crab for this)
- 1 small red chilli , diced
- 1.0 tbsp chopped coriander
- 1.0 tbsp crème fraîche
- 1 egg yolk
- 30.0g grated parmesan
- 1 lime , juiced
- small basil leaves , to serve
