Crab & cheese toasts

Method

  1. Toast the bread under the grill on both sides. Spread an even layer of brown crabmeat on top of each slice.
  2. Mix the white crabmeat with the chilli, coriander, crème fraîche, egg yolk and parmesan. Season with salt, pepper and lime juice.
  3. Generously top the toasts with the mixture and grill for a few minutes until golden and bubbling. Remove and decorate with the basil leaves.

    Not great. Although I think the crab I used was pretty tasteless so that might be why!

    Made this many, many times and always delish!! I use the John West crab meat in brine, a bit expensive but quick & easy.

  • 4 big slices sourdough bread or farmhouse bread
  • 1 cooked crab , white and brown meat separated (you can use a prepared, dressed crab for this)
  • 1 small red chilli , diced
  • 1.0 tbsp chopped coriander
  • 1.0 tbsp crème fraîche
  • 1 egg yolk
  • 30.0g grated parmesan
  • 1 lime , juiced
  • small basil leaves , to serve
