Wilted spinach with pine nuts & raisins

Lightly dressed greens are the ideal lazy Sunday roast side dish. This takes just minutes to prepare

Method

  1. Whisk all the dressing ingredients together. Heat a large wok or frying pan over a high heat, add a tbsp of olive oil and half the spinach then stir-fry briskly for a few minutes, until the spinach has begun to soften and wilt. Transfer to a warm serving dish.
  2. Repeat with the remaining oil and spinach, adding the pine nuts this time to warm through. Add to the rest of the cooked spinach and toss while warm with the dressing. Season and serve warm.

    Spinach is not my favorite vegetable, but I love this recipe! It's delicious, healthy and so easy to make. Last week we had it with roasted chicken. Tomorrow I'll serve it with fish for guests.

    Made this with only 200g of spinach and a whole broccoli! It was lovely - it was like a warm salad which I thoroughly welcomed in this cold weather. It was tasty and healthy! I served it with a grilled beef steak and it was a light and nutritious weekday dinner. It was also appreciated by my boyfriend! What more could I ask for?

  • 80g raisins , soaked in hot water for 20 minutes until plump, then drained
  • 2 garlic cloves , finely chopped
  • 1 tbsp finely chopped oregano leaves
  • 125ml olive oil
  • 2 tbsp red wine vinegar
