Steaks with sweet pepper sauce

Spice up that tender bit of beef with a peppery sauce

Method

  1. Heat 2 tbsp olive oil in a pan and add the onion, chilli and garlic. Cook until the onion is soft but not coloured.
  2. Stir the red peppers into the onions and cook until heated through. Add the balsamic, basil and season. Whizz until smooth (you may need to add a splash of hot water).
  3. Meanwhile, heat a griddle or frying pan until hot. Oil and season the steaks and cook for 2 minutes each side for rare, 3 minutes for medium.
  4. Serve with the sauce, salad and potato wedges.

    Only used specified amount of vinegar but found it abit sharp, added more basil to add more oomph.

    Very tasty. I thought I had roasted peppers in the fridge yet when I came to make this recipe the jar was sundried tomatoes and these worked perfectly. There was some of the sauce left over (probably due to the amount of hot water I had added) which I have frozen to use another time as a pasta sauce. Will definately do this again to see if it is even nicer using the roasted red peppers!!!
