Easy cheesy frittata

This simple lunch dish is a great way of getting children aged 5-9 involved in the kitchen

Method

  1. Ask a grown-up helper to switch the oven on to 180C/ 160C fan/gas 4. Snip or cut up the spring onions and put them in a bowl. Add the peas to the bowl.
  2. Grate the courgette using your rotary grater, one half at a time, then add it to the bowl.
  3. Cut the ham into pieces with your scissors, if you do this over the bowl it will fall straight in.
  4. Break the feta into the bowl by crumbling it with your hands.
  5. Crack the eggs into a bowl and, if any bits of shell fall in, scoop them out with a spoon. Whisk the eggs until the yolks are mixed into the white.
  6. Pour the eggs into the other bowl and stir. Brush a round ovenproof dish, about 16cm across, with oil. Tip everything into the dish. Ask a helper to put the dish in the oven for 30 minutes or until the egg is set. Serve with salad and crusty bread.

Equipment

You'll need children's scissors with metal blades or a small knife, depending on your child's age. A rotary grater is kinder to little knuckles.

    As a vegetarian alternative, I use crumbled vegetarian "sausage" patties instead of ham. Morningstar is the most popular brand in the U. S., but I'm sure any brand would taste delicious!

    This would make a tasty change from my Cheesy Baked Eggs (which is so easy, I don't usually bother trying the eggs with anything else). I just grate a load of cheese into an ovenproof dish. Mix some eggs, milk and seasonings separately, then pour over the cheese. Bake in a medium oven for 20 minutes at a time. I cut through the setting sides at the middle of each of the 4 edges, and let the unset egg mix pour round the outsides, at each check. Quantities and timings depend on how many you're cooking for and the size and depth of the dish. I serve with tomatoes, or a tomato/cucumber/spring onion salad. Sometimes a bit of toast.

    I used peppers instead of ham and phili garlic and herb instead of feta, seasoned liberally with salt and pepper. Served 2 hungry adults with bread, quick delicious meal.

    Really easy to make and yummy. Oops, I put too much salt. The cheese is salty enough. It actually turned out like the picture which is a rarity.

    Made this for saturday lunch, went down well with my 2 year old daughter and husband. I used smoked salmon which tasted delicious. So easy to make too.

    This was simple and really yummy. However I should have really paid more attention to the fact it was for a "simple lunch" before making it for mine and my boyfriends tea. Even with a salad we were still hungry! I will definitely make it again though.
