Ginger prawn oriental broth

This seafood broth makes the ideal starter to a Chinese-themed meal

Method

  1. Put the stock, ginger and rice wine or sherry in a pan and bring to a simmer. Cook the veg in the broth until just tender.
  2. Add the prawns and cook until pink. Divide between 2 bowls, scatter with the herbs and season with soy sauce.

    This is a delicious, quick and very healthy dish and it's great for lunch if you add rice noodles for a more substantial soup.

    Great recipe, perfect mid week meal I added some rice noodles to bulk it up. I have also made it with chunks of salmon instead of prawns which was also great.

    Really quick and easy yummy lunch or light dinner! I was feeling extra lazy so used frozen wok veggies which made it even quicker to cook! 5 mins from start to finish!

    This has become my new favourite all-time soup and a great starter when you're making an Asian-themed meal! I like to add a stick of bruised lemongrass, bean sprouts and a handful of thick rice noodles. Healthy, filling and for those who don't like chicken soup, this will still definitely cure a cold! For more of a kick, I cook one small red chilli with the broth and remove it before serving.

    Delicious!!! Irresistable!!! Made it many times with different vegetables and my boyfriend and I enjoyed it each time. Very easy to make, and perfect for cold days.

    Lovely! I added some finely sliced mild red chilli and garlic for a bit more of a kick. Mushrooms are a nice addition, great to use up veg in the fridge! I actually found it very filling even without noodles, but did add a lot of vegetables.

  • vegetable stock or chicken stock, fresh, cube or concentrate made up to 500ml
  • a small chunk root ginger , peeled and thinly sliced
  • 1 tbsp rice wine or dry sherry
  • 200g mixed vegetables such as mange tout , sugar snaps, baby corn, green beans, baby carrots
  • 10-12 large, raw prawns , peeled
  • a small handful of coriander and/or mint leaves
  • soy sauce for seasoning
