Citrus grilled fish with spiced carrots
If you fancy a light dinner before a big night out, this citrussy fish is just the thing

Ready in 20 mins
- Cook the carrots in boiling salted water for about 5 minutes, until tender. Drain. Stir-fry the garam masala, spring onions and carrots in a little oil in a frying pan for 2-3 minutes, until the carrots start to become golden on the edges. Season and scatter the coriander over.
- Meanwhile, heat the grill. Put the fish on a non-stick baking sheet, rub a little olive oil over, and season. Lay the citrus slices on top and grill for 8-10 minutes, until cooked through and golden on top. Serve with the carrots.
