Very quick chicken curry

A super quick and tasty curry for those who love Indian spices but don't have time to spend hours in the kitchen

Method

  1. Heat a little oil in a deep non-stick frying pan (with a lid) and add the onion. Fry for about 3 minutes until tender then stir in the curry paste and fry for a minute. Add the chicken and tomatoes and a splash of water, cover and cook for 15-20 minutes until cooked through. Stir in the spinach until it just wilts then stir in the yoghurt and coriander. Season. Serve with rice, naan bread or a salad.

    Great simple curry which I adapted with the addition of some of my own ingrediants such as osome coconut milk and a handful of dried mango

    I always make this curry but i add loads of veg, whatever ive got in the fridge, as well as the chicken. I use different flavour pastes. To make it healthier i use brown basmati rice.

    A great economical mid week curry - added fresh chillies, but didn't change anything else and it tasted really authentic. Definitely a regular from now on.

    This was gorgeous and a perfect Saturday night dinner for me and other half; loved it! I used chicken breasts rather than thighs - I have issues with thighs for some reasonbut so yummy. Possibly put a wee bit too much curry paste as it was a bit spicy! Can't wait to make again also h2b who always moans when we have curry descirbed it as f***ing brilliant!

    made this dish for the 1st over Xmas for the in-laws absolutely fab - everyone loved it - there was plenty of sauce left over (as they were only four of us) which we reheated the next day and ate as soup with some bread - lush

    Unbelievably easy and absolutely delicious - everyone in the office is making this now. Good enough for an evening with friends or a great midweek meal. I used Tandoori Curry paste and have also used a Korma paste for the kids. Tasted even better the next day for a quick work lunch.

    This was incredibly easy and tasted great. I also used chicken breasts and added coconut milk. The only problem I encountered was that I had to buy a large container of plain yogurt because the store didn't sell small ones so now I have to find a use for the rest of it but this recipe was perfect for me because I'm not a skilled cook and this was simple, economical and the first curry I've ever cooked myself.

    does exactly what it says on the tin - very quick and easy. I chucked some broccoli and baby corn and mushrooms in with the chicken which bulked it out, I think it might have been a bit small otherwise. I also used chicken breast, but I think thighs would be a bit tastier.

    This is a great recipe, love it! Prefer to have the yogurt on the side though, and with a green pepper and some chillies Mmmm! Just away to make it again just now, yum yum.
