Chicken with couscous salad

A popular combination - chicken with a side of citrussy, aromatic couscous, ready in minutes

Method

  1. Put the couscous, pepper, spring onions and raisins in a heatproof bowl. Pour the chicken stock over, cover and leave for 10 minutes.
  2. Fluff up the couscous with a fork and stir in the pine nuts and lemon juice. Season and serve with the sliced chicken and salad leaves.

    Didn't have a red pepper so used a handful of pepperdew peppers instead which gave a nice spicy bite to the meal.
