Chicken with couscous salad
A popular combination - chicken with a side of citrussy, aromatic couscous, ready in minutes

- Put the couscous, pepper, spring onions and raisins in a heatproof bowl. Pour the chicken stock over, cover and leave for 10 minutes.
- Fluff up the couscous with a fork and stir in the pine nuts and lemon juice. Season and serve with the sliced chicken and salad leaves.

- 50g raisins
- chicken stock , fresh, cube or concentrate, made up to 300ml
- 2 tbsp toasted pine nuts
- 1 lemon , juiced
- 2 roasted chicken breasts , sliced, skin discarded
- 4 handfuls of salad leaves
