Green pea & tarragon soup

Grab those frozen peas from the back of the freezer for a quick fix soup

Method

  1. Fry the onion in a knob of butter until tender, add the potato and stock and simmer until the potato is very soft. Add the peas and tarragon, simmer for 3 minutes then blend to a smooth soup. Season and serve.

Petit pois are picked earlier earlier than standard peas and have a much sweeter flavour.

    This is a vibrant coloured soup with a good flavour. The second time I made it, I had to use dried tarragon which I put in at the same time as the stock and potatoes. It worked just as well as with fresh tarragon. The recipe does not tell you how much stock to use. I have used 1 litre on each occasion and it seems right.

    Very nice - and I hate peas! I bought some by accident and thought I might as well use them, and I'm glad I did. As Victoria said, it freezes well. I put in individual freezer bags and just take one out each morning for my lunch at work. Better than a soggy Sainsbury's sandwich any day.

    Very healthy soup and SO easy to make. I took a tip from one of the other pea recipe comments and served a small amount of this soup at a dinner party in a small coffee cup with baked bread. It was just enough for my guests and a great idea. Thanks!

    I didn't have any tarragon so I used some basil after googling for alternatives, the result however was that it was absolutely amazing!!! Delicious with fresh crusty bread, a dollop of (sour) cream and some parmasan flakes!!! A definate must!

    This was really easy to make and received lots of compliments! Only put in about a tablespoon of fresh tarragon from the garden but the taste was still quite pronounced and wouldn't use more. Added a swirl of cream too but didn't feel it needed bread as it was part of 4 courses. Would definitely make it again.

    I loved this soup. Wasn't sure about the tarragon but it goes perfectly with peas. In fact its the best pea soup I have ever tasted. I agree with previous people, 1 litre of stock is fine. I used dried tarragon and used 2 tsp. My only addition was to add a garlic clove and extra potatoes. Great foe freezing.
