Blueberry & white chocolate muffins

Method

  1. Heat the oven to 200C/fan 180C/gas 6 and line a 6-hole muffin tin with paper cases. Mix the egg, melted butter and milk quickly into the dry ingredients with the blueberries and chocolate (don't overmix, it should be a bit lumpy). Divide between the cases and bake for 25 minutes until risen and golden and cooked through.

    Followed the advice of other reviewers and used self-raising flour instead of plain. Also didn't have enough white chocolate, so just used 50g instead of 75g. The result was delicious, perfect, all the family loved them. Wld give 5 stars for taste, but reduced to 4 stars because of having to alter the flour type.

    I made this reciepe about a week ago. I use frozen Raspberrys as i had those at home in the freezer already. When i added them, and mix them in slightly, the mixture was left with a pink swirl which made the muffins look so pretty when they came out of the oven. They tasted lush ! Although some didn't rise as well as others.

    5-star rating for flavour but although I tried 2 eggs and 1tsp baking powder as other cooks had suggested, they rose but weren't as good-looking as normal muffins! I am going to remake with 2 eggs but only 1/2 teaspoon of baking powder. TIPS - using frozen blueberries didn't seem to increase the cooking time... Before baking, each case should be at least 3/4 full... When baked they stick to the cases - use teaspoon and plate to eat...

    I altered this a little to include apples and cinammon, added an extra half teaspoon of baking powder and used self raising flour not plain. Turned out brilliantly, very light and fluffy but I think I'll add more sugar next time as they weren't as sweet as I'd have liked(probably the apples!).

    Very easy to make and tasted delicious. I did take note of the suggestions on here and used 1 tsp of baking powder. Muffins rose well, were good texture and huge hit with my husband.

    I used milk chocolate as we don't like white chocolate and they worked really well. i also sprinkled sugar on the top for crunch. Very nice.

    Just baked these using 1 tsp baking powder and a LGE duck egg... They were absolutely lush... Perfectly fluffy and blueberries remained very juicy (I rolled them in flour first) .. Well worth it... :-)

    Just made these muffins,took note of the comments and used 1 tsp baking powder,2 eggs and 50% extra on the ingredients.made 9 yummy muffins :) they were a bit cakey though but I think that was due to me over mixing and not the recipe!
