Method

  1. Mix all the dry ingredients (except the blueberries) with a pinch of salt. Mix the egg, melted butter, vanilla and milk and whisk into the dry mix to make a thick batter. Stir in the blueberries. Heat a non-stick frying pan and fry large spoonfuls of the batter mix until little holes appear on the surface, flip and cook the other side till golden.

    Really easy to do - the blueberries burst and spread their flavour through. Works brilliantly topped with golden syrup.

    Lovely pancakes, easy to make, I drizzled with honey afterwards and they were a total dream. Used macadamia nut oil for frying. Another (Polish) version includes using grated apple instead; this makes for a more jagged pancake which is slightly more tart. My mum and I wolfed the blueberry ones down with coffee one breakfast - will def make again. Really US style (as in smallish and thick (and not your large thin crepe type). Fabulous.

    I've never liked pancakes before but...yum yum, these are lovely. I added half a tsp of cinammon to the mixture too which was really good.

    these pancakes are the best, i've never made american pancakes before but was very easy. The blueberries are delicious and taste really jammy once cooked, i couldn't think of a better fruit to add. Plus, this recipe is similar to cake mixture with the sugar, so there's no wasting of whats left in the bowl, tastes as good as the cooked version!

    Have never tried american pancakes before not being a particular fan of ordinary pancakes but these were absolutely scrummy - will definitely make again. Very easy and quick to make.

    My kids were raving too and asked to make these pancakes again. I served them with a mix of honey and melted butter and a glass of milk, and I used only 3/4 of blueberries, as it seemed that otherwise there would be only blueberries and no pancakes. :)

    Made these for breakfast this morning. Very yummy! Made them look fancy by dusting with icing sugar and scattering a few spare blueberries over the top. Mixture makes 6 pancakes.

    YUM!!! didnt have any blueberries so put in 3 big spoonfuls of strawberry jam to the mixture. cooked super quickly and we ate them with sugar and lemon... next time il try them with bananas...
