Carrots glazed with thyme

Method

  1. Put the carrots, butter, sugar and thyme in a wide shallow pan with a lid. Season, then add water to come halfway up the carrots.
  2. Bring to a simmer, cover and cook until the carrots are almost tender, about 3-5 minutes. Turn up the heat, remove the lid and cook until all the liquid has evaporated and the carrots are glazed.

    Have used this recipe as written several times now, and it is always successful. For a change though, try substituting maple syrup for the sugar and coriander for the thyme. Keep everything else the same - works just as well.

    A real improvement on boiled or steamed carrots but I also had problems with the amount of water and the time it took to boil away. They did look good though, as they really kept thier colour. May try the additional bay leaf and perhaps a bit more thyme for extra flavour.

    These are GORGEOUS! I'm so impressed with this recipe - far better than just putting knobs of butter on carrots before serving. I had no thyme so I used dried dill - worked perfectly. I also did carrot batons instead of slices. Thanks for such a great recipe! :)
