Carrots glazed with thyme

Method

  1. Put the carrots, butter, sugar and thyme in a wide shallow pan with a lid. Season, then add water to come halfway up the carrots.
  2. Bring to a simmer, cover and cook until the carrots are almost tender, about 3-5 minutes. Turn up the heat, remove the lid and cook until all the liquid has evaporated and the carrots are glazed.

    Lovely simple recipe that makes a plain dish of carrots something quite lovely. Will definately use again, I'm thinking it would be perfect and easy to do on Christmas day to add extra magic to the Christmas lunch and it's not too much hassle on an otherwise already busy day!

    Really tasty recipe, only problem I had was that the amount of water recommended was too much and this took a lot longer to reduce than anticipated. Luckily I thought this might be the case and I did allow more cooking time.

    This is so easy and effortless i now cook my carrotts like this every time. Instead of a pan I use a oven proof cassarole dish on the gas hob and let them simmer away until i'm ready to serve..gorgeous

    Easy and Tasty. After the carrots are ready, I pulled them. Then, I add more water and a little of olive oil and add onions. Very great.
