Beef, chestnut & red wine casserole

Chestnuts really make this stew special, perfect on a winter's day - but good enough to make all year

Method

  1. Fry the beef in a little oil over a high heat until browned in a small casserole dish. Add the onions and keep frying until they start to brown. Add the thyme, wine and stock, bring to the boil, then turn down the heat and simmer for 1 hour, lid on.
  2. Add the carrots and chestnuts, season and cook gently for a further hour, lid off.

Cook raw chestnuts

To cook chestnuts from raw, pierce the skin, roast at 220c/fan 200/gas 7 for 4-5 minutes. Cool then peel.

    Lovely recipe I added plenty of parsnips and carrots to bulk it up. Also used some beef shin leaving the bone in for the first hour and removing to make room for the veg.

    Very easy to make but a lot for two people! Made it to the half way point on Friday, finished the cooking and ate most of it on Saturday and then ate the leftovers on Sunday. Would make again but would be tempted to use shallots instead of ordinary onions and add more vegetables - it would then feed 4.

    This was absolutely amazing, doubled the quantities and made enough for four, went down a treat! such a good combination of flavors and the sweet chestnuts make the dish. Would love to do this dish all year round but it's a pity it's so hard to find the chestnuts when they're out of season, definitely recommended though!!

    Didnt enjoy this at all- too rich for me, and I didnt enjoy the texture of the chestnuts - wouldn't put them in a stew again (and they were hard find/expensive!)

  • 450g beef (braising or chuck steak), cut into cubes and tossed in seasoned flour
  • 1 onion , chopped
  • 2 sprigs thyme
  • 300ml fresh beef stock , or from a cube
  • 200g cooked, peeled chestnuts , fresh or vaccum pack
  • 2 carrots , sliced
  • 250ml red wine
