Chicken in a bag with sage & buttered potatoes

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Divide the potatoes between 4 parchment bags (available at supermarkets or make your own with baking parchment) and add a good knob of butter and some seasoning to each. Lay a chicken breast on top of the potato slices, add a sprig of sage, a squeeze of lemon juice and another knob of butter and seal the bag. Put the bags on a baking tray and bake for 25-30 minutes until the potato feels soft. Split open and serve.

    This is a favourite and we've had it several times - tried it with sweet potatoes and that was ok. Last time I forgot to buy a lemon but had satsumas in the fruit bowl...it worked fine!

    I'm eating this as I type (dinner for one!) I added the garlic and it's very very tasty but the potaoes are still a bit hard after 30 mins. Think i'll par boil them for a couple of minutes first next time. I'm having it with spring greens. Yum.

    Really, really tasty potatoes, but the chicken was a little dry, but that might be because I cooked it for about 40 mins.
