Chocolate & cardamom torte

The ultimate chocolate indulgence - smothered in chocolate sauce for extra wickedness

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Line a 18cm springform cake tin with greaseproof paper. Melt the dark chocolate together with the butter in a heatproof bowl over a pan of simmering water or in the microwave. Beat the egg yolks, half the sugar and the cardamom until pale, very thick and creamy. Add the melted chocolate and mix well.
  2. Whisk the egg whites and remaining sugar until stiff. Now carefully fold the egg whites into the chocolate mixture making sure you stir it very gently. When mixed, spoon it all into the prepared tin and bake for 20-25 minutes. Set aside to cool. The finished torte should have a baked-mousse-like consistency.
  3. For the chocolate sauce, bring 100ml water to boil add the milk chocolate and cardamom and whisk until thick and glossy. Serve with the torte.

    This cake is definitely better when served with chocolate sauce as that makes it more moist. Interesting combination of tastes.

    Very tasty. dont bye cardamom and crush it yourself, its doesnt taste as good as useing ground cardamom. very simple and easy to cook apart from its hard to not get it stuck to the pan. taste great with cream!

    A lovely slightly squidgy cake. I served it with some fresh soft fruit, just to ease my conscience ;-)

    This tasted great and was a lovely texture - but I had way to much mixture for the tin, so didn't put it all in, but even so it rose over the top of the tin. When I took it out of the oven is sank in the middle, so was not exactly a glamourous looking pud, but like I said, tasted great! The sauce was a revelation as well...never knew you could make chocolate sauce that way, although it was a little thin so I would probably use less water next time.

  • 150g unsalted butter
  • 6 eggs , separated
  • 40g golden caster sugar
  • 1¼ tsp ground cardamom
