Ingredients

  • 200g soba noodles (buckwheat)
  • 200g broccoli, cut into small florets
  • 100g large, cooked prawns
  • 1 red pepper, cut into matchsticks
  • 1 lime, cut into wedges

Sweet soy dressing

  • 6 tbsp ketjap (Kecap) manis
  • 1 medium red chilli, seeded and chopped
  • 1 garlic clove, finely chopped
  • 1 tbsp ginger, finely chopped
  • 2 limes, juiced

Method

  1. Boil the soba noodles for 5 minutes or until al dente. Drain and rinse in very cold water. Drain again and put in a large bowl. Blanch the broccoli in salted water until al dente. Drain, rinse in very cold water, drain thoroughly again and add to the noodles.
  2. Combine the dressing ingredients in a small bowl. Pour over the noodles, add the prawns and peppers and mix well. Serve with lime wedges.

Very refreshing in summer.
And you can replace the broccoli by pretty much anything you want; mangetout, green beans, beansprouts or any leftovers you have!

Didn't like this. I don't think the flavours work well - its eatable, but doesn't have a wow factor.

This was really good. I served it warm with both prawns and poached chicken for those not so keen on prawns and sprinkled it with chopped peanuts and sesame seeds before serving. I'm just curious what the green stuff in the dressing on the picture is.

I followed Redladym's advice for making this as a hot dish and it was amazing - tasty, filling and fresh. I'll try it in future as a salad, and with different veg for variety, but this is a great recipe as is.

I had the same problem with the ketjap manis but I did not check in M&S, so I will in future (thanks to GERRY). However, the soy sauce with sugar trick seemed to work. I also did a hot version of the dish (thanks to redladym for the tip) and thought it was delicious: fresh, flavourful and far superior to anything ready made.

This is very easy to make, healthy, filling and yet very low in fat. I found the ketjap manis in M&S.

I made this as a hot dish rather than a cold salad and it was delicious. I fried the chilli and ginger then the garlic then added the prawns and vegetables. When they were cooked through I added the cooked noodles. I didn't have the ketjap manis either but copied the previous poster by mixing soy with some sugar and then the lime and stirring it through.

Couldn't find any ketjap manis so I substituted with 4tbsp soy sauce wisked wih 1 tbsp of treacle and it turned out wonderfully. I'm not sure if that quite mirrors the taste but my family wasn't complaining! We also sprinkled chopped peanuts on the top which was v. authentic.
