Soba noodles with broccoli, prawns & sweet soy dressing

- Boil the soba noodles for 5 minutes or until al dente. Drain and rinse in very cold water. Drain again and put in a large bowl. Blanch the broccoli in salted water until al dente. Drain, rinse in very cold water, drain thoroughly again and add to the noodles.
- Combine the dressing ingredients in a small bowl. Pour over the noodles, add the prawns and peppers and mix well. Serve with lime wedges.
Know-how
Ketjap (kecap) manis is a thick, sweet soy sauce from Indonesia. It is far less salty than using soy and makes great dressings or dipping sauces. Major supermarkets stock it in the Asian section.

- 1 red pepper , cut into matchsticks
- 1 lime , cut into wedges
SWEET SOY DRESSING
- 6 tbsp ketjap (Kecap) manis
- 1 medium red chilli , seeded and chopped
- 1 garlic clove , finely chopped
- 1 tbsp ginger , finely chopped
- 2 limes , juiced
