Soba noodles with broccoli, prawns & sweet soy dressing

Method

  1. Boil the soba noodles for 5 minutes or until al dente. Drain and rinse in very cold water. Drain again and put in a large bowl. Blanch the broccoli in salted water until al dente. Drain, rinse in very cold water, drain thoroughly again and add to the noodles.
  2. Combine the dressing ingredients in a small bowl. Pour over the noodles, add the prawns and peppers and mix well. Serve with lime wedges.

Know-how

Ketjap (kecap) manis is a thick, sweet soy sauce from Indonesia. It is far less salty than using soy and makes great dressings or dipping sauces. Major supermarkets stock it in the Asian section.

    Couldn't find any ketjap manis so I substituted with 4tbsp soy sauce wisked wih 1 tbsp of treacle and it turned out wonderfully. I'm not sure if that quite mirrors the taste but my family wasn't complaining! We also sprinkled chopped peanuts on the top which was v. authentic.

    I made this as a hot dish rather than a cold salad and it was delicious. I fried the chilli and ginger then the garlic then added the prawns and vegetables. When they were cooked through I added the cooked noodles. I didn't have the ketjap manis either but copied the previous poster by mixing soy with some sugar and then the lime and stirring it through.

    This is very easy to make, healthy, filling and yet very low in fat. I found the ketjap manis in M&S.
