Roasted butternut squash salad with soy balsamic dressing

Roasting the squash concentrates and sweetens the flavour of this fresh, good-for-you salad

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Put the squash on a baking sheet, drizzle with 1 tbsp olive oil and season. Roast for 20 minutes or until tender, shaking the tray a couple of times to keep it from sticking. Simmer the lentils for about 15 minutes or until al dente, then drain.
  2. Whisk together the dressing ingredients. Put the rocket in a shallow serving bowl and arrange the lentils and squash on top. Pour the dressing over and top with sesame seeds and spring onion.

    Fantastic recipe, lovely dressing. I cubed the squash into 1cm pieces and cooked for longer. Also added roasted peppers. Even my 6 and 4 year old boys ate this - great introduction to lentils and spinach. We will definitely make again.

    One of THE most delicious meals I have ever eaten and feel so good for you. I serve this with the salmon from the 'thai salmon with cucumber & dipping sauce' recipe on top and it is divine.

    This has become our all time favourite salad. The dressing is lovely! I am usually not a fan of rocket, but the dressing complements the rocket perfectly and I love the end result!

    I used sweet potato instead of butternut and maple syrup instead of honey. I served it with chicken breasts and drizzled the dressing over the chicken too - lovely!!! I will definitely be making this again!

    Just .. the ... best.. warm salad going.. yum, yum, yum. You couldn't find a better side for plain meat (BBQ or just grilled) and good on it's own hot or cold; great for veggies too. My carnivore husband tells me he would happily eat a plate full of this with Feta; big surprise as he doesn't do puy lentils or squash..Defo in the favorites box.

    Made this recently on one of those hot summer evenings, and am back to make it again. I cheated and microwaved the squash for 7 mins before chucking it in the oven to finish off. I also added feta and radishes thinly sliced, worked really well.
