Prawn & harissa stew with couscous

Method

  1. Put the couscous in a bowl with 1 tsp olive oil and just cover with boiling chicken stock. Cover and leave to swell for 5 minutes. Heat 1 tbsp oil in a pan, add the onion and garlic and fry for 1-2 minutes or until just tender. Add the cumin and fry for a minute, add the tomatoes and harissa and bubble everything together until it thickens slightly. Season well.
  2. Stir in the prawns and cook for 3 minutes, then scatter the coriander over. Serve with the couscous.

    Absolutely gorgeous and so easy to prepare. I don't agree with the comments about the cous cous lacking flavour/texture as there was plenty of sauce to flavour all of the cous cous and plenty of prawns for texture! My favourite dish from this website (so far!).

    This was fine but we weren't over impressed. My husband said it wasnt very memorable and he wouldnt be bothered if he didnt have it again! tut! He can cook tonight! I understand what he meant tho'. I agreed.

    A great dish! The harissa paste has such a nice flavour! Added some finely chopped peppers, cucumber, coriander and a squeeze of lime to the cous cous to take away the blandness.

    I just adored this recipe. It will definitely become a regular in this household. I added some baby mushrooms and peppers plus an extra spoonful of Harissa going by the comments. Can anyone tell me if this is safe to reheat the day after as I have a portion left I was going to have over a jacket potato?

    Very tasty and quick and easy as well. I'm not a great lover of cous cous but thought I'd do irt per the recipe the first time - will try it with rice or naan bread the next time!

    Absolutely delicious! I cooked the stew exactly as the recipe. I added pomegranate seeds and coriander to the couscous though and it was very tasty.
