Prawn & harissa stew with couscous

Method

  1. Put the couscous in a bowl with 1 tsp olive oil and just cover with boiling chicken stock. Cover and leave to swell for 5 minutes. Heat 1 tbsp oil in a pan, add the onion and garlic and fry for 1-2 minutes or until just tender. Add the cumin and fry for a minute, add the tomatoes and harissa and bubble everything together until it thickens slightly. Season well.
  2. Stir in the prawns and cook for 3 minutes, then scatter the coriander over. Serve with the couscous.

    Neither me or my husband are a fan of prawns but we loved this recipe. I made the sauce in advance so it could just be heated through with the prawns at the last minute. Perfect when you have two small kids and very little time. I have made this with pasta adding black olives and a chopped red pepper to the sauce. Also good with crusty bread and salad.

    The stew itself was superb. Really quick & super tasty. whizzy enough for me to bung together on returning from gym. I'm definitely not a couscous fan though - I thought I'd give it another go with this recipe. Next time I'll use rice or possibly use the stew as a jacket potato topping.

    have made this a few times gone down very well with partner and 2 yr old daughter, substituting rice for the couscous on more than one occasion as she loves rice, would try with different seafood or as jacket topping as previously suggested.

    I add shelled pistachios, fried shallots and chopped coriander to the cous cous as many people don't like the lack of texture.I have also served spicy sausages instead of prawns with this dish and it worked really well.

    This is great - even to somebody who doesn't normally like cous cous that much. I added some harissa paste into the cous cous for a bit of extra kick!

    Easy, quick and tastey. I also put 3 tsp of harissa in the stew and used 1.5 chicken stock cubes to give the cous cous more flavour. Everyone loved it so I will be making this again.
